Vegan cheese invented in the USA

In the US, start-up Change Foods invented a vegan cheese without cow’s milk or plant-based ingredients and received support from big names in the food technology sector. It is reported by Bloomberg.
According to Bloomberg, vegan cheeses can’t be compared to real cheeses in taste and texture. However, Change Foods believes that it is necessary to grow such dairy products not on the basis of plant components, but through precision fermentation. “This way we don’t have to wait two or three years to raise a cow,” explains company founder David Bacca. The new technology allows the production of milk proteins using microorganisms that have part of the cow’s DNA.
Thanks to technology, it is possible not only to recreate the taste and melting properties of cheeses, but also to facilitate their production. “The holy grail of protein alternatives is cheese,” Bacca says. Cheese is the last thing people give up when they switch to a plant-based diet. They have a good reason for this – some people will never be able to give up cheese, because the alternative that exists now simply does not suit them. There is something unique about milk proteins that cannot be adequately achieved with plant-based ingredients.”
Along with collaboration agreements with Upfield and Sigma, Change Foods has also raised $12 million in a new seed funding round. The total investment in the company exceeded $15.3 million. Among the investors are Route 66 Ventures, as well as the head of Google’s artificial intelligence division, Jeff Dean.
